Just wanted to leave my 2 cents for OP. My egg drop/egg flower in ramen used to look clumpy like that too when I would pour the egg into the pot of noodles directly. I now get better results by using a spider to remove the noodles into the serving bowl, then do the “egg flower” thing into the pot of broth, and then pour the broth over the noodles.
